Sunday Morning Pumpkin Spice Pancakes

I think I’m pancake challenged. Really. My girlfriend and I woke up today on this lovely Sunday morning (that will soon be filled with term papers) and decided to make a healthy version of one of our favorite breakfasts. This is the SECOND time we have attempted these pancakes and although this round they stayed together a lot better than the first attempt, we didn’t quite get the hang of it until the last pancake. That’s why the one on the bottom is so pretty:
Pancake photography at its finest. I was so glad to be able to have pancakes and feel good about them since I missed them so much. Every time I would eat old-fashioned wheat and sugar-filled pancakes I’d feel bloated and foggy all day, but these made me feel ready for my workout.
I wanted to enjoy some tea with these babies but last night I ran out of my favorite tea in the entire world. I bought it while I was studying in London and they ONLY make it in the UK. I never realized how much I LOVED it until I came home and sweetened it with stevia. It’s basically like drinking candy that makes you happy and warm. I looked online to order more and nobody ships it to America for less than $60. I was heartbroken. Luckily, my amazing friend, Gov, who lives in London has agreed to send me boxes upon boxes in exchange for sending him Chips Ahoy, Peanut Butter Oreos, and S’mores Poptarts. He loves our American treats as much as I love his London tea! If you live in the UK or Europe, do try this gorgeous fruity tea.
Anyway, back to the recipe!
♡ 2 ripe bananas
♡ 2 tbsp coconut flour
♡ 2 organic eggs
♡ 1 tsp vanilla extract
♡ a liberal amount of pumpkin spice
♡ extra virgin coconut oil to fry with
&
♡ Grade B organic maple syrup to drizzle on top
Directions:
♥ simply mash bananas and whisk in your coconut flour, eggs, vanilla, and pumpkin spice until they make a smooth pancake batter mixture.
♥ put a pan on medium heat and melt coconut oil.
♥ MAKE DELICIOUS PANCAKES AND FLIP.
These are truly so easy and healthy. They made our Sunday morning special and I hope they make yours as well!
